Line a 9 inch pastry pan with rich dough. Prick bottom with fork, and brush with a little beaten egg. Cover the bottom with a piece of wax paper, fill with dried beans, and bake at 450 F for 15 minutes. Remove the beans and wax paper. Whisk egg yolks in bowl, add cream, and whisk until thick and lemon colored. Flavor to taste with salt, pepper, and nutmeg. Cut fat bacon or salt pork into thin strips and remove rind. Blanch bacon in boiling water for 3 minutes, saute strips in 2 tablespoons of butter until golden. Arrange diced cheese and fat bacon strips on pastry. Pour over the cream and egg mixture.
